• Smallanthus sonchifolius is a distant relative of the sunflower with edible tubers and leaves

• Most other roots and tubers store carbohydrates as starch - a polymer of glucose; Yacon Root stores carbohydrates as fructooligosacaride (FOS) - a polymer composed mainly of fructose.
• May assist with healthy diets, diabetes (may help to regulate and normalized glucose levels in the blood, due to FOS content), and colon-related issues.
